Quick & Easy Healthy Vegan Breakfast


Looking for a quick and easy way to make breakfast in the morning? Then try out my new favorite vegan recipe for a not so average breakfast to start your day! My favorite recipe has to be my skin plumping, blueberry and coconut milk vegan overnight oats. I love overnight oats because they are so easy to make, they are very filling and a great way to start your day.


Blueberries are rich in antioxidants, which means they help build more collagen, prevent skin damage, and leave your skin feeling plumper overall. Because of all the added benefits of blueberries, I love to add them into any recipe I can.


Coconut Milk can help boost collagen production as well. It also aids in cell regeneration, the renewing of skin cells, which can help keep your skin feeling firm and elastic.


The Recipe:
  • ½ cup of rolled oats

  • ½ cup of coconut milk

  • ½ cup of fresh blueberries

The Method:

  • 1. In a jar add the oats, coconut milk, fresh blueberries & stir the mixture together until all oats are covered in the milk.

  • 2. Over the jar and place in the fridge for several hour or overnight

  • 3. Once ready to eat, top with fresh blueberries and enjoy your skin plumping overnight oats breakfast!
